PROBLEM TO BE SOLVED: To provide a composition containing &beta-glucan having high molecular weight in high concentration, and having favorable water solubility: and to provide a method for producing the composition through a simple operation in a short time.SOLUTION: The composition contains 9-89.9 mass% of &beta-1, 3-1, 4-glucan and 10-70 mass% of starch, and has a gelatinization degree of &ge25 wt.%.
