A steamed fermented rice cake composition comprises rice, raw rice wine, sugar, salt, dried yeast, and additives, wherein the additives comprises cellulose series, enzymes, and disaccharides. The steamed fermented rice cake composition, relative to 1000 wt% of the rice, comprises 550 to 650 wt% of the raw rice wine, 130 to 170 wt% of the sugar, 10 to 14 wt% of the salt, 4 to 6 wt% of the dried yeast and 30 to 50 wt% of the additives. The present invention provides the steamed fermented rice cake composition for delaying aging and producing a steamed fermented rice cake having a high moisture content.증편 조성물은 쌀, 막걸리, 설탕, 소금, 건효모 및 첨가제로 이루어지고, 상기 첨가제는 셀룰로오스(cellulose) 계열, 효소제, 이당류를 포함한다. 상기 증편 조성물은 상기 쌀 1000 중량부에 대해, 상기 막걸리 550 내지 650 중량부, 상기 설탕 130 내지 170 중량부, 상기 소금 10 내지 14 중량부, 상기 건효모 4 내지 6 중량부 및 상기 첨가제 30 내지 50 중량부의 비율을 갖는다.
