A method for preparing a Camellia japonica extract, and a method for preparing the food by using the Camellia japonica extract are provided to prepare an ice cream, a cookie, a candy or a jelly containing the functional ingredient of Camellia japonica. A method for preparing a Camellia japonica extract comprises the steps of (S10) adding the flower of Camellia japonica to refined sugar or oligosaccharide in bamboo leaves to mature it; (S20) mixing the matured one, any one of the dried leaves of Camellia japonica or the parched leaves of Camellia japonica, and any one of the dried bamboo leaves or the parched bamboo leaves, and warming it in a double boiler; and (S30) filtering the warmed one to obtain an extract.
