PURPOSE: A method of manufacturing ginseng powder is provided to increase the taste and smell of white ginseng and red ginseng by browning reaction products according to non-enzymatic browning reaction. CONSTITUTION: Raw hemp consisting of red ginseng is primarily dried in order to have a moisture content of 12-18 weight%. Foreign substances adhered on the surface of the dried raw hemp is selectively removed. The raw hemp in which the foreign substances are removed is sterilized at a temperature of 95-98°；C for 20-30 minutes in the relative humidity of 100% by a heat/moisture process. The sterilized raw hemp is secondarily dried at a temperature of 50-60°；C in order to have a moisture content of 7-10 weight%. The raw hemp which is secondarily dried is cut into a fixed size. The cut raw hemp is pulverized into 80-20 mesh through a coarse grinding process and a fine grinding process. [Reference numerals] (AA) Step of drying Raw hemp； (BB) Step of removing foreign substances； (CC) Step of heat/moisture sterilizing； (DD) Step of secondarily drying； (EE) Step of completing fine grinding powder본 발명은 습열살균처리를 통해 대장균과 일반세균 및 곰팡이 등을 살균시키면서 열변형과 변색없이 맛과 향이 증대되도록 한 인삼분말 및 그 제조방법에 관한 것으로, 더욱 상세하게는 홍삼이나 백삼으로 된 원료삼을 수분함량 12 ~ 18중량%로 1차 건조처리하는 원료삼건조단계와, 건조처리된 원료삼의 표면에 묻은 이물질을 선별 제거하는 이물질제거단계와, 이물질이 제거된 원료삼을 상대습도 100%에서 95 ~ 98℃의 온도로 20 ~ 30분간 습열처리하여 살균시키는 습열살균단계와, 습열살균처리된 원료삼을 50 ~ 55℃에서 수분함량 7 ~ 10중량%가 되도록 2차 건조처리하는 2차건조단계와, 2차건조된 원료삼을 일정크기로 커팅처리하고 조분쇄 및 미분쇄과정을 거쳐 80 ~ 120mesh로 분말화하여 완성하는 인삼분말완성단계를 통해 제조되는 것을 특징으로 하는 습열살균처리된 인삼분말 및 그 제조방법에 관한 것이다.
