Provided are a method for producing tuna peptide and powder. To this end, the method comprises the following steps: carrying out a reaction by adding at least one of activated carbon and diatomite in an attempt to purify steamed tuna concentrate; removing polymeric viscous substances by pressure-filtration to make a desalination process easy; lowering molecular weight distribution of the steamed tuna concentrate by undergoing the desalination process using the pressure-filtered steamed tuna concentrate; removing low molecular toxic chemicals and free heavy metal derived from marine products; and adding emulsified starch and hydroxypropyl methylcellulose to the enzyme-decomposed steamed tuna concentrate to make the same enteric and acid-resistant.본 발명은 참치 자숙농축액을 정제하기 위해 규조토 및 활성탄 중 적어도하나를 첨가하여 반응시키고, 가압여과하여 고분자 점성물질을 제거함으로써 탈염공정을 용이하게 한 후, 가압여과한 참치 자숙농축액을 탈염공정을 통해 참치 자숙농축액의 분자량 분포를 축소하고, 수산물 유래 유리중금속 및 저분자 독성물질 제거하고, 효소분해 참치 자숙농축액에 hydroxypropyl methylcellulose와 유화형 전분을 첨가하여 장용성 및 내산성 특성을 부여하여 제조하는 참치 펩타이드의 제조방법과 분말을 제공한다.
