The present invention relates to a method of manufacturing a hydrolysis extract of byproducts of the dried yellow pollock which can be used as a natural seasoning. The method of manufacturing a hydrolysis extract of byproducts of the dried yellow Pollock includes the steps of: performing sonication on byproducts of dried yellow pollock slices; firstly extracting the byproducts of dried yellow pollock slices using protease; secondly extracting the byproducts of dried yellow pollock slices by adding radish puree and using protease; and filtrating and drying the byproducts of dried yellow pollock slices. According to the present invention, by the method of manufacturing a hydrolysis extract of byproducts of the dried yellow pollock, the collagen content and the extraction yield are increased. When used as a food material, the hydrolysis extract of byproducts of the dried yellow pollock: is easily absorbed into the human body; is highly digestible; supplements protein; improves skin texture by an effect of collagen included in the extract; reduces bitter taste of the dried yellow pollock; and enhances rich taste, flavor and thus preferences of the dried yellow pollock.본 발명은, 콜라겐을 함유한 천연조미료로서 사용 가능하도록 하기 위하여 황태채 가공부산물을 초음파 처리하고, 단백질 가수분해효소에 의해 1단계 추출한 후에 무즙을 첨가하여 단백질 가수분해효소로 2단계 추출하고, 여과하고 건조하여 황태채 가공부산물의 가수분해 추출물을 제조하는 방법으로서, 본 발명에 따르면 콜라겐 함량과 추출수율이 향상되며, 식품 소재로 사용할 경우 흡수 및 소화가 향상되며, 단백질 보충의 효과가 있으며, 콜라겐을 함유하고 있어서 피부 미용을 개선하며, 쓴맛이 개선되어 황태 고유의 진하고 시원한 맛과 냄새를 강하게 나타내는 것이 가능하여 기호성을 높일 수 있다.
