PROBLEM TO BE SOLVED: To provide an encased food in which a liquid material is sealed, in the form of large and small lumps in a gelled material.
SOLUTION: A container 20 is filled with a cooled raw material liquid 11 and then a heated gelling agent solution to form a gelled material solution 12 regulated to be at a temperature which is not higher than the gelation start temperature. The gelled material solution 12 is then pressed and filled with a liquid material 13 from the upper part thereof by using a nozzle. By having the material solution 12 remain in the un-gelled sites, the liquid material can be sealed and distributed in a form of large and small appropriately independent or continuous lumps throughout the whole container 20. A merchandise having superior taste of simultaneous sensation of tastes of the gelled material 10 and the liquid material 13, such as, cream on coffee jelly or liquid jam sauce in yogurt can be obtained.
