PROBLEM TO BE SOLVED: To provide a method for producing aroma oil having aroma derived from an organism.SOLUTION: A method for producing aroma oil having aroma derived from an organism includes at least the following step (1) and step (2). The step (1) is an extraction step including keeping a pressure in an extraction container 100 to 10 kPa or less by a decompression device A while keeping a temperature range at 10-50°C, and extracting an aqueous solution containing an aroma component from the organism.
