The present invention relates to a water-in-oil surfactant consisting of a mixture of compounds of formula (I): (I) wherein the compound of formula (I) has an average degree of polymerisation n of between 4 and 6, R1, R2 and R3 being, independently of one another, a hydrogen atom or a group R4 derived from at least one carboxylic acid, the carboxylic acid being 12-hydroxystearic acid or a mixture of 12-hydroxystearic acid and ricinoleic acid. The present invention also relates to a surfactant composition and to a cosmetic composition comprising this surfactant.La présente invention concerne un tensioactif eau dans huile constitué d'un mélange de composés de formule (I) : (I) le composé de formule (I) ayant un degré de polymérisation moyen n compris entre 4 et 6, R1, R2 et R3 étant, indépendamment l'un de l'autre, un atome d'hydrogène ou un groupement R4 dérivé d'au moins un acide carboxylique, l'acide carboxylique étant l'acide 12-hydroxystéarique ou un mélange d'acide 12- hydroxystéarique et d'acide ricinoléique.
