The present invention relates to a de-molding apparatus for confectionery products and a de-molding method using the same, wherein confectionery products molded in molding grooves of a mold which is made of polycarbonate and has the plurality of molding grooves formed in a flat plate having a tray structure can be easily demolded from the mold. According to the present invention, it is possible to prevent damage to the mold for molding confectionery products such as chocolates, biscuits, cupcakes, and the like which have a predetermined shape, thereby extending a persisting period of the mold. Unlike a conventional de-molding apparatus for confectionery products, the de-molding apparatus uses a striking unit to strike a support member of the mold with striking strength weaker than that of a conventional striking unit, and the support member is struck the number of times less than the number of striking made by the conventional striking unit, and still, the confectionery products can be easily separated from the molding grooves of the mold, and thus, the mold is not easily damaged, and it is possible to prevent a fragment of the mold from being introduced to the confectionery products. In addition, the confectionery products molded in the mold are not stuck to the molding grooves but can be separated easily from the molding grooves, and thus, defective confectionery products may not be produced, thereby improving productivity.본 발명은 트레이(tray) 구조의 평판에 복수 개의 성형홈이 형성된 폴리카보네이트 소재인 몰드의 성형홈 내에서 성형된 과자류를 몰드로부터 쉽게 분리시키는 것을 특징으로 하는 과자류 디몰딩 장치 및 이를 이용한 디몰딩 방법에 관한 것으로, 본 발명에 의하면 일정한 형상을 갖는 초코릿, 비스킷, 컵 케이크 등과 같은 과자류를 성형하기 위한 몰드의 파손을 예방하여 몰드의 내구연한을 연장시킬 수 있고, 그리고 종래의 과자류 디몰딩 장치와는 달리 몰드의 지지부재를 타격부로 종래의 타격강도보다 약하고, 종래 및 타격횟수보다 적게 타격하여도 과자류가 몰드의 성형홈으로부터 쉽게 분리되므로 몰드가 파손되지 아니하여 몰드 파편이 과자류에 유입되는 것을 예방할 수 있으며, 또한 성형된 과자류가 몰드의 성형홈으로부터 유격되어 성형홈 내에 달라 붙지 않고 쉽게 분리됨으로써 불량 과자류가 발생하지 아니하여 생산성을 향상시키는 효과가 있다.
