PROBLEM TO BE SOLVED: To provide meat-like food by using soybean protein as the main raw material.SOLUTION: A method for producing the meat-like food includes molding a sample which is obtained by mixing granular soybean protein reconstituted with hot water, a gel-like product obtained by adding to separated soybean protein, water 3-5 times the weight thereof followed by kneading, and onion and seasoning, drying by heating the product at &le100°C for &le3 h, using a heating dryer so as to bring the water content to 75-60%, and irradiating the product with a microwave so as to bring the water content to 60-30% followed by binding a meat substitute. Furthermore, the method includes reconstituting the product with seasoning-containing hot water followed by baking or cooking with oil so as to obtain hamburg steak having meat-like palate feeling.COPYRIGHT: (C)2012,JPO&INPIT【課題】 大豆蛋白を主原料として用い、肉様食品を提供すること。【解決手段】 湯戻しした粒状大豆蛋白と、分離大豆蛋白に対し重量で3~5倍量の水を加え混練したゲル状物と、玉葱、調味料などを混合した試料を成型し、加熱乾燥機を用いて100℃以下で3時間以下加熱乾燥し水分含量が75~60%になるようにした後で、次いで水分含量が60~30%になるようにマイクロ波を照射して肉代替物を結着する。その後、調味料を含む液で湯戻しし、更に焼成または油ちょうして肉様食感を有するハンバーグなどを得る。【選択図】なし
