PROBLEM TO BE SOLVED: To provide an ice making method capable of efficiently and smoothly making ice pieces with a desired temperature and/or a desired ice thickness, without hindering an ice crushing step and a conveyance step regarding an ice making amount per necessary unit time, in a case where ice-made pieces are used by conveying crushed ice grains.SOLUTION: A ice making method comprises cooling supplied water flowing on an ice making surface with coolant to form ices, and separating ices formed on the ice making surface to make ices. The ice making method includes the steps of: preliminarily setting a required ice making amount per unit time and a required ice piece temperature; and on the basis of the required ice making amount per unit time and the required ice piece temperature, adjusting an ice formation speed on the ice making surface and an ice separation speed of formed ice from the ice making surface.SELECTED DRAWING: Figure 1
