PROBLEM TO BE SOLVED: To provide a manufacturing method and a manufacturing device of thick fried tofu capable of mass production of the thick fried tofu good in flavor, taste and finish of appearance without deteriorating texture specific for hand fried-like thick fried tofu at low manufacturing cost.SOLUTION: A thick fired tofu is manufactured by solidifying soybean milk to prepare tofu dough and frying the resulting tofu dough with oil. A manufacturing method includes an additive input process for inputting an additive liquid containing at least protein crosslinking enzyme (transglutaminase or the like), a coagulant input process for inputting a coagulant into the soybean milk and a fine air bubble mixing process for mixing fine air bubbles with the soybean milk.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】手揚げ風の生揚げ独特の食感を損なうことなく、風味、食感、及び見栄えの仕上がりが良好な生揚げを、低い製造コストで、大量生産が可能な生揚げの製造方法及び製造装置を提供する。【解決手段】生揚げは、豆乳を凝固させて豆腐生地を調製し、得られた豆腐生地を油で揚げることで製造される。製造工程として、豆乳に、少なくともタンパク質架橋酵素(トランスグルタミナーゼ等)を含む添加剤液を注入する添加剤注入工程と、豆乳に凝固剤液を注入する凝固剤注入工程と、豆乳に微細気泡を混入させる微細気泡混入工程と、を含むようにした。【選択図】図1
