<;P>;PROBLEM TO BE SOLVED: To provide jiaozi having less irregular color in a baked surface even if using a little amount of pouring oil in casseroling. <;P>;SOLUTION: The jiaozi is jiaozi before casseroling for obtaining baked jiaozi by casseroling, and the baked surface of the jiaozi is processed so that the most prominent part thereof has a projecting shape of not less than 2 mm to the peripheral part. The jiaozi is produced by a production method including the steps of preparing a tray in which a plurality of holding parts to hold jiaozi are connected to the adjacent holding part through a connecting part, and the bottom of the holding part is formed in a recessed shape; and holding jiaozi in the tray so as to bring the baked surface into contact with the tray bottom, and processing the baked surface in a projecting shape along the bottom. <;P>;COPYRIGHT: (C)2010,JPO&INPIT
