PROBLEM TO BE SOLVED: To provide a method of making a dough for baked goods by which the baked goods with crispy texture is obtained, particularly the dough most suitable as the topping dough of a melon bread, that is, the dough for baked goods capable of obtaining nonsticky baked goods portion crispy even after the lapse of time in the melon bread obtained by baking a bread dough as a middle and the dough for baked goods as the topping one.

SOLUTION: The method of making the dough for baked goods includes retarding the fermentation of a dough obtained by blending wheat flour, oil-and-fat A, saccharide, and water, and then kneading oil-and-fat B into the dough after retarding.
