The invention relates to a foodstuff comprising proteins essentially of vegetable origin capable of being obtained by a process comprising the steps consisting in: (iv) selecting a natural source of vegetable proteins comprising nutrients: (v) extracting a vegetable juice from the natural source of vegetable proteins, said vegetable juice comprising almost all or all of the nutrients contained in the natural source of vegetable proteins and (vi) treating said vegetable juice from step (ii) with transglutaminase, characterized in that when the natural source of vegetable proteins consists exclusively of soya, said foodstuff also comprises a food ingredient of non-animal origin.
