PURPOSE:To prepare a cherry ice cream having excellent taste and flavor, by adding and mixing chopped edible cherry leaves to an ice cream mix. CONSTITUTION:Edible cherry leaves for the wrapping of SAKURA-MOCHI (a bean-paste rice cake wrapped in a cherry leaf) are salted with about 10-20wt%, based on the leaf, of salt, stored in a dark cold place, and chopped to fine pieces, or the salted and chopped cherry leaves are mixed with brandy or kirschwasser (a cherry liquor) after evaporating the alcohol with hot water bath. The obtained chopped edible cherry leaves or the cherry sauce is added to and mixed with an ice cream mix composed of a fat, a sugar, a stabilizer, an emulsifier, water, etc., and processed by the conventional ice cream preparation process to obtain the objective cherry ice cream.
