An aqueous dispersion of microcapsules, wherein the microcapsules include: a. at least one hydrophobic substance; and b. a protein interface, surrounding at least one hydrophobic substance, the protein interface includes glycosylated with the addition of polysaccharide (s) protein, and moreover, glycosylated with the addition of polysaccharide (s) protein includes at least one protein residue and at least one residue of a high molecular weight polysaccharide .2. Aqueous dispersion according to claim 1, wherein the microcapsule essentially consists of: a. at least one hydrophobic substance; and b. a protein interface, surrounding at least one hydrophobic substance, the protein interface, essentially consisting of glycosylated with the addition of polysaccharide (s) protein, and moreover, glycosylated with the addition of polysaccharide (s), the protein essentially consists of at least one a protein residue and at least one polysaccharide residue. 3. The aqueous dispersion of claim 1, wherein at least one polysaccharide residue has a molecular weight of at least 5 kDa. An aqueous dispersion according to claim 1, wherein at least one polysaccharide residue has a molecular weight of at least 200 kDa. The aqueous dispersion according to claim 1, wherein at least one polysaccharide residue is selected from a pullulan residue, a dextran residue, a guar gum residue, a fruit tree resin residue, a container gum residue, a pectin residue, and combinations of any of them. The aqueous dispersion of claim 1, wherein at least one protein residue is selected from a whey protein residue, an ovalbumin residue, a lysozyme residue, an ost1.
