A milk-based composition with a reduced carbohydrate content, having a carbohydrate-to-protein ratio of not more than 1.1, with a protein content of at least 45% on a dry matter basis, and an ash-to-protein ratio substantially similar to that of the milk raw material used in quality of the starting material. 2. The composition according to claim 1, in which the ratio of carbohydrates to protein is not more than 0.9.3. The composition according to claim 2, in which the ratio of carbohydrates to protein is not more than 0.4.4. The composition of claim 1, wherein the carbohydrate to protein ratio is at least 0.02.5. The composition of claim 1, wherein the ratio of monovalent minerals to protein is substantially the same as that in dairy raw material. A composition according to claim 1, which is a powder form. A milk-based composition according to claim 1, containing a milk protein concentrate obtained by ultrafiltration of milk raw material. A composition according to claim 1, containing a concentrate of minerals obtained by reverse osmosis of nanofiltration permeate obtained by nanofiltration of ultrafiltration permeate of milk raw material. A composition according to claim 1, containing a fraction containing protein and minerals obtained by chromatographic separation of milk raw material. A composition according to claim 1, containing from 45 to 65% protein, from 4.6 to 41% carbohydrates and from 1.0 to 14% ash from the total dry skim milk residue.
