PURPOSE: A collecting method of chitin and chitoic acid is provided to obtain high quality chitin and chitoic acid and to use by-products generated from a collecting process. CONSTITUTION: A collecting method of chitin and chitoic acid comprises the following steps: washing, drying, and crushing shells of crustaceans； extracting astaxanthin from the crushed crustacean shells using alcohol； inserting the crustacean shells into an extraction tank including lactic acid and boiling the mixture for separating ash contents； and inserting the crustacean shells into an extraction tank including potassium carbonate and boiling to separate protein for obtaining the chitin.본 발명은 키틴의 수득 방법에 관한 것으로, 보다 구체적으로는 (a) 갑각류 껍질을 분쇄하는 단계； (b) 상기 분쇄된 갑각류 껍질에 함유된 아스타잔틴을 주정으로 추출하는 탈색단계； (c) 상기 (b)에서 탈색된 갑각류 껍질을 젖산이 담긴 추출탱크에 투입하고 끓여서 회분을 추출 및 분리하는 탈회 단계； (d) 상기 탈회 단계를 거친 갑각류 껍질을 탄산칼륨(K2CO3)이 담긴 추출 탱크에 투입하고 끓여서 단백질을 추출 및 분리시켜 키틴을 수득하는 탈 단백단계를 포함하는 키틴의 수득방법에 관한 것이다. 또한, 본 발명은 상기 키틴의 수득방법에서 수득된 키틴을 증류수로 씻어 중화시킨 후 발효 탱크에 투입하고, 미생물을 상기 발효 탱크 내에서 접종시켜 탈 아세틸화하여 키토산을 수득하는 키토산의 수득방법에 관한 것이다.
