PROBLEM TO BE SOLVED: To provide a tea extract having reduced bitterness, acidity and impure taste, providing good compatibility with various kinds of beverages, and exhibiting high stability of nonpolymeric catechins when the beverage or the like formulated therewith is subjected to sterilization treatment.
SOLUTION: The purified tea extract includes (1) 45-90 wt.% content of the nonpolymeric catechins in a solid component, (2) 0.001-47 wt.% gallate content in the nonpolymeric catechins, (3)&le0.3 ratio (by weight) of the gallic acid amount/the nonpolymeric catechin, (4)&le0.08 ratio (by weight) of free amino acids/the nonpolymeric catechins in the tea extract, and (5)&le0.15 ratio (by weight) of (sucrose+dextrose)/the nonpolymeric catechins in the tea extract.
