The present invention relates to a method for producing a feed by injecting a microorganism in a leftover food and by fermenting the same, and a microbial fermented feed manufactured thereby, the invention comprising: a process of mixing a leftover food with an ingredient feed a process of vacuum fermentation a selection process a process of mixing animal and plant residues a process of continuous fermentation a crushing process a secondary selection process a pellet process a freeze-drying process and a packaging process. Accordingly, it is possible to lengthen a period of feed storage to produce a feed with flavors (taste and aroma), thus improving an intake of feed for livestock and to increase a digestion by livestock due to microorganisms present in the feed. Particularly, the present invention relates to a microbial fermented feed which has an economic efficiency and a practicality. According to the present invention, a vacuum drying is performed by a vacuum fermentation and drying apparatus in a state of a water content being lowered to 20 to 40% in the continuous drying process which is a pre-process and accordingly, it is possible to obtain a satisfactory drying effect and to meet fermentation conditions of the leftover food. Accordingly, the present invention does not require a moisture controlling agent and replacing thereof, animal and plant residues, necessary for feed ingredients, are mixed with microorganisms to replenish nutrients in the feed and then a vacuum fermentation is performed.
