This invention provides a method of preserving freshness of bone-in meat, which performs in advance a cleaning means to remove and wash away the filth of fresh bone-in meat before storage. The method of preserving freshness of bone-in meat comprises a processing means, a high temperature vapor sterilization means, and a vacuum sealing means by which fish can be maintained in a vacuum and oxygen-insulated environment, and processing and seasoning can be performed to prevent growth of bacteria and to keep the freshness, such that the mouth feel can be prevented from deterioration when the meat is eaten.本發明係為一種帶骨肉類之鮮度保存方法,其係預先進行一清理手段去除並清洗新鮮帶骨肉類之髒污後加以保存,該帶骨肉類之鮮度保存方法係包含一加工手段、一高溫蒸氣滅菌手段以及一真空封存手段,藉以使魚類處於真空隔氧之環境中,並加工調味能避免細菌滋生,保持其新鮮度,食用時口感不會變差。
