The present invention relates to a process for starch midification comprising vaporizing an aqueous sludge and non-pregelatinized starch to an inner chamber in a two-fluid nozzle of a spray drier by treating the pulverized slurry in the inner chamber. with overheated steam causing partial starch gelatinization. The partially gelatinized starch-containing aqueous slurry is discharged through an outlet in the inner chamber to a reactor, where the droplets containing the partially gelatinized starch are subjected to further treatment with superheated steam, resulting in the termination of starch gelatinization in the reactor. Also provided is a two-fluid nozzle for use in starch spray drying comprising a nozzle body, a nozzle cap and an inner chamber located between the nozzle body and the nozzle cap. the nozzle body comprises at least one sprayer for connection to a supply of aqueous starch slurry for spraying the slurry to the inner chamber having at least one inlet for connection to a superheated pressure steam supply for introducing steam. overheated under pressure to the inner chamber. the nozzle cap comprises at least one outlet of the inner chamber. The inner chamber also comprises an internally interchangeable spaced element with a length of 10 to 60 mm, allowing the length of the inner chamber to be modified.
