PROBLEM TO BE SOLVED: To provide a manufacturing method of a chocolate composite food product composed of a bubble-containing food material impregnated with chocolate dough, which has excellent heat resistance and resistance to bloom, being readily meltable in the mouth and a chocolate composite food product.SOLUTION: The manufacturing method of a chocolate composite food product composed of a bubble-containing food material impregnated with chocolate dough includes the following steps A, B, and C: a step A of preparing a chocolate dough in a melt state having a StOSt content of 26 to 70 mass% in fat of the chocolate dough a step B of adding a seeding agent which contains at least &bgr-type StOSt crystals to the chocolate dough in a melt state and a step C of impregnate a bubble-containing food product with the chocolate dough added with the seeding agent (where StOSt represents 1,3-distearoyl-2-oleoyl glycerol).
