PURPOSE: Food additive is provided to be effective against wrinkle by controlling factors related to production and decomposition of collagen. CONSTITUTION: Food additive comprises processed extract of Panax species plant as an active ingredient that let sum of contents of ginsenoside Rg3, Rg5, and Rk1 higher than sum of content of ginsenoside Rb1, Rb2, Rc, and Rd. Processed Panax genus ginseng extract is manufactured as follows. Panax species plant is sliced and put in an autoclave to be heated at 70 °;C to 150 °;C, under 2 to 30 atmospheric pressure for 1 to 24 hours. Heated material is 1 or 20 times weight ratio(w/w) of water of sample weight, or low grade alcohol of C1 to C4 or mixture of these using cold extraction, hot water extraction, ultrasonic wave extraction, reflux cooling extraction, or heating extraction to be extracted. Extract is filtered, concentrated under reduced pressure, and dried. Food types are confectionery, pastry, ice cream products, tea, fermented milk products like yogurt, dairy products, seasoning, liquor, canned food, or bottling, noodles, processed livestock products, processed marine products, fermented microorganism products, soya products, grain products, processed meat products, licorice products, or herb products.본 발명은 진세노사이드 Rb1, Rb2, Rc, Rd의 함량의 합보다도 진세노사이드 Rg3, Rg5, Rk1의 함량의 합이 더 높은 파낙스속 식물의 가공추출물을 유효성분으로 함유하는 조성물에 관한 것으로, 더욱 상세하게는 deramal fibroblast에서 직접적으로 세포의 증식을 증가, 콜라겐과 TIMP-1의 합성 증가, UV 조사로 인해 감소한 피부 진피 세포의 Procollagen 발현을 증가, 콜라겐 분해를 촉진하는 MMP-1의 발현 감소 효과를 나타내는바, 콜라겐의 생성 및 분해에 관련된 인자들을 조절하여 피부 주름개선용 식품첨가물로 유용하게 이용될 수 있다.
