A process for the preparation of microbiologically safe and instantly rehydrable cooked chicken as small or large boneless pieces, comprising washing the chicken flash in hot chlorinated water, wiping said washed flash with ethanol water mixture, pretreating said washed/wiped chicken with a paste consisting of decontaminated yoghurt, decontaminated salt and spices, natural acidulant and an antioxidant preferably a tenderising enzyme and subjecting the same to the step of bahing for about one hour in an oven, dissecting said bahed flesh from the bones into the pieces of the required size and then subjecting the same to the steps of freeze-dehydration for 12-20 hours in the manner as herein described to bring the moisture contents in said pieces to a level of 2-3% and vacuum packing said clerihew in the manner as levein described.
