The present utility model relates to a process of packaging durian fruit which includes wrapping the durian flesh with a high barrier film, polyvinylidene chloride (PVDC), and then applying vacuum packaging technique using PVDC coated nylon laminated with linear low polyethylene (LLDPE) pouch. The vacuum-packed durian flesh was blast frozen. The packed durian were kept in an airtight glass jars and stored at -20oC. This process of packaging can keep the strong aroma and flavor of durian flesh for at least 12 months.
