PURPOSE: A dietary fiber extraction method using dried radish leaves, and dietary fibers obtained from the dried radish leaves are provided to maximally extract active components from the dried radish leaves. CONSTITUTION: A dietary fiber extraction method using dried radish leaves comprises the following steps: collecting radish leaves, and washing(S110); drying the radish leaves with natural light or in the shaded place(S120); crushing the dried radish leaves into 100 meshes(S130); mixing the dried radish leaves with fermentation enzymes including cellulase or hemicellulase obtained from fallen leaves with the dried radish leaves for fermenting(S140); extracting liquid from the fermented dried radish leaves(S150); extracting the liquid using a filtering apparatus in a vacuum condition(S160); removing the unique smell of the dried radish leaves, and obtaining more than 95% of insoluble dietary fiber(S170); and packaging the obtained extract before sterilizing and cooling(S180).
