PROBLEM TO BE SOLVED: To provide a handmade noodle production tool which not only enables a beginner of a handmade noodle production to easily perform a delicate work such as the adjustment of a thickness at the time of extending a noodle dough or the adjustment of a width at the time of cutting the noodle dough but also can be stored in compact without taking a space so much.SOLUTION: A handmade noodle production tool for shaping and cutting a noodle dough including a chopping board member having a generally rectangular surface and a noodle dough holding Koma plate comprises a tabular guide rail so disposed near the two longitudinal sides of the surface of the chopping board member as to be able to be freely mounted and de-mounted in parallel with the sides. The height of the guide rails can be adjusted by stacking a plurality of guide rails or replacing the guide rails. The guide rails are provided with scales. The Koma plate is provided with a recessed groove part.
