PURPOSE: A producing method of edible fibers using kimchi byproducts is provided to obtain the water-insoluble edible fibers having excellent cholesterol decreasing capability. CONSTITUTION: A producing method of edible fibers using kimchi byproducts comprises the following steps: mixing 100 parts of byproducts by weight and 30-200 parts of water by weight, and heating the mixture at 80-150 deg. C for 1-100 minutes before filtering to obtain first edible fibers; drying the first edible fibers at 30-80 deg. C for 1-20 hours, and crushing; mixing 100 parts of crushed first edible fibers by weight with 500-3,000 parts of water by weight for suspending, and adding hydrolase for reacting at 15-70 deg. C for 5-20 hours to obtain second edible fibers; and filtering the second edible fibers to obtain solid parts, and drying the solid parts at 30-80 deg. C for 1-20 hours before crushing.
