PURPOSE: Fermented wild grass liquid having the protease activity, a producing method thereof are provided to adding a nitrogen source to wild grass juice or powder diluents of before injecting culture fluid of bacillus subtilis strains. CONSTITUTION: A producing method of fermented wild grass liquid comprises the following steps: juicing wild grass for obtaining juice； adding soybean powder or fermented soybean powder to the juice as a nitrogen source； and injecting 0.5~5% of culture fluid of bacillus subtilis strains to the juice, and fermenting for 60~100hours at 35~55deg C. The wild grass is angelica keiskei, oenanthe javanica, mugwort, aster scaber thunb, bog rhubarb, pimpinella brachycarpa, or kale.본 발명은 산야초 착즙액 또는 분말 희석액에 질소원을 첨가하고, 바실러스 서브틸리스(Bacillussubtilis) 균주의 배양액을 접종하여 발효시켜 제조된 것을 특징으로 하는 단백질분해효소(프로테아제) 활성을 갖는 산야초 발효액 및 이의 제조 방법에 관한 것이다.본 발명에 따른 산야초 발효액은 장류 및 절임류 소재로 적용하여 기능성과 기호성이 향상된 고부가 가치의 제품 생산에 활용할 수 있을 것으로 사료된다.
