The invention relates to a composition for bakery products and pastries. According to the invention, the composition consists, in mass parts, of up to 95 parts of white wheat flour, possibly composite flour, such as a mixture of 50 parts of white wheat flour with 30...40 parts of rye flour and a mixture of 35...45 parts of rice flour with 7...9 parts of soy flour, respectively, up to 30 parts of powders of vegetables, such as pumpkin, carrots, beetroot, and fruits such as apples and quinces, and 3 parts of yeast, 12 parts of sunflower oil, margarine or butter, 60 parts of sugar, 30 parts of corn starch, a mixture of eggs, milk, baking powder, as well as up to 60 parts of water.
