PROBLEM TO BE SOLVED: To provide a frozen dessert which has the original smooth dissolving property in the mouth without depending on the temperature in freezing and hardening or the temperature change in storage, and which can be easily scooped by a spoon to eat.SOLUTION: The frozen dessert is produced by mixing a bubble-containing processed food containing albumen, milk serum and polysaccharide thickener, in which part of proteins of albumen and milk serum is aggregated to form aggregates, and whose specific gravity is 0.3-0.7, and whose viscosity (20°C) is 10-90 Pa s, with a frozen desert mix, and freezing the mixture.
