PROBLEM TO BE SOLVED: To provide a fermentation seasoning using soybean or soybean milk as a raw material, containing salt, and being opaque, having a low salt content of 4 to 8% and having a high content of water-soluble nitrogen which is a taste component.SOLUTION: Provided is a fermentation seasoning having a water content of 50% or more, a water-soluble nitrogen content of 0.5% or more, and an ethyl alcohol concentration of 3% or more, and being opaque, which is obtained by using yeast, Saccharomyces cerevisiae, which decomposes protein by protease in a state where heated soybean powder or heated soybean milk has a salt content of 4% or more and has fermentable sugars of 6% or more, contains trehalose in an amount of 20% or more, and has a deodorizing property.
