The assembly has a lower plate (10) with a receiving surface (11) to receive drying cheese molds (20), where the molds are arranged on side-by-side on the receiving surface of the plate. Each mold comprises a reinforcing/wedging unit (24) that is arranged at periphery of a main body, where the reinforcing/wedging units form a unitary block with the plate when one of the reinforcing/wedging units is in contact with the other reinforcing/wedging unit of the adjacent mold. The reinforcing/wedging unit avoids the relative displacement of the molds between each other and with respect to the plate.
