PROBLEM TO BE SOLVED: To obtain various bread such as an English bread, a roll bread, a Danish bread, a French bread using rice flour as a main raw material, not glutinous, having a weak sour taste, and not containing a chemical, and to provide a method for producing the same. SOLUTION: In producing breads such as an English bread comprising rice as a main raw material, 100.0 wt.% of rice flour having 180-200μm particle diameter, 2.0-13.0 wt.% of sugar, 1.0-8.0 wt.% of table salt, 1.0-10.0 wt.% of powdered skim milk, 1.5-7.5 wt.% of active yeast and 65.0-82.0 wt.% of water are used as raw materials. Successively, these materials are kneaded to form a bread dough, which is fermented in a fermentation chamber having an inner temperature kept at 26-42 deg.C and a humidity at 68-89% for 15-75 minutes and the obtained dough is baked in an oven having an inner temperature kept at 180 deg.C to 235 deg.C for 20-45 minutes. The components of the rice flour are preferably 95-71 wt.% of rice flour, 4-26 wt.% of gluten and 1-3 wt.% of a thickener.
