The present invention is related to a method for obtaining high methoxy pectin resulting from citrus residues such as lemon peel, which is reduced to polyphenols, extracted with a biodegradable acid, particularly GDL, which presents an improved yield and an esterification degree of 55-67%. The invention has functional gelling (pseudo plastic fluid) and emulsifying (53%-67%) properties and physicochemical characteristics of humidity, a total content of ashes (not higher than 10%), methoxy content (not higher than 6.7%) within the intervals of quality requirements necessary for commercial pectin. The obtention process of the same is presented. Said pectin may be used in the preparation of food as a thickening, gelling and/or emulsifying agent.La presente invención está relacionada con el método de obtención de una pectina de alto metoxilo, a partir de residuos cítricos como son cáscaras de limón reducida en polifenoles, extraídas con un ácido biodegradable, en particular GDL, que presenta mayor rendimiento y un grado de esterificación de 55-67%. Con propiedades funcionales gelificantes (fluido pseudoplástico) y emulsificantes (53-67%) y características fisicoquímicas de humedad no mayor, contenido de cenizas totales (no mayor 10%), contenido metoxilo (no mayor al 6.7%) dentro de los intervalos de requerimiento de calidad para la pectina comercial. Se presenta el proceso de obtención de la misma. Dicha pectina puede ser empleada en la preparación de alimentos como agente espesante, gelificante y/o emulsificante.
