An aging method of meat is provided. The aging method includes: immersing a meat ingredient in an aged medium and putting it into an enclosed space in a predetermined temperature and a predetermined pressure for a predetermined time to obtain a marinated meat ingredient and freezing the marinated meat to obtain the aged meat ingredient wherein the meat ingredient includes aquatic or livestock, and the aged medium includes wine lees or shio koji. This method is capable of increasing the flavor of meat, and maintaining the freshness and the hygiene of the processed meat.本發明係揭露一種熟成肉品之方法,包含下述步驟:將肉原料浸泡於熟成介質並置放在密閉空間內,在預設溫度及預設壓力下持續預設時間,以獲得醃製之肉原料;以及將醃製之肉原料進行入凍處理,以獲得熟成之肉原料;其中肉原料係包含水產品或畜產品,熟成介質可包含酒粕或鹽麴。藉由此方法可增加肉品之風味、保持肉品加工後的新鮮衛生。S1~S2‧‧‧步驟
