PROBLEM TO BE SOLVED: To provide a bread processing device capable of minimizing intervention of manpower, for providing sandwich bread having a delicate cutting surface, by processing bread of a relatively soft state in the stage of passing a short time after being baked. SOLUTION: This bread processing device 1 has a first slicer (a slice device) 2 for slicing the bread 1A in the predetermined thickness, and a second slicer (a bread piece cutter) 3 for cutting off ear parts 1C and 1D of a bread piece 1B provided by slicing. The first slicer 2 transfers the bread piece 1B provided by slicing by a disc cutter 10 to a carrier conveyor 4 by a bread piece receiving table 11 and a bread piece transfer table 12. The second slicer 3 provides the sandwich bread 1E by cutting off the ear parts 1C and 1D by disc cutters 85 and 140 while pressing and fixing the bread piece 1B by fixing mechanisms 50 and 110.
