The present invention relates to an animal feed composition comprising fermented coffee residual products as active ingredients and a manufacturing method thereof. The fermented coffee residual products are manufactured by the following steps: inoculating strains into coffee residual products and fermenting the coffee residual products at the temperature of 20-25°C with the moisture of 60-70% in an anaerobic state. The fermented coffee residual products fermented by using useful microorganisms decompose a fluorinated material and synthesize microorganism protein, thereby increasing preference and being used as an animal feed having improved nutritional values. Also, by providing a method for using coffee residual products, which was disposed as waste, as raw materials for recycling of resources, environmental pollution load can be reduced.
