PROBLEM TO BE SOLVED: To prevent saline water from contamination by unwanted bacteria brought into the water by foods in a saline processing method for perishable foods wherein perishable foods are immersed in a processing water which is a water solution of sodium chloride. SOLUTION: The processing saline water is so prepared that it comprises a specified amount of a sodium chloride water solution and a specified amount of a sterilization-capable chloride component and that at least 1 mg/liter of the chloride is residual in the processing saline water after a saline treatment for preventing the saline water from the unwanted bacteria contamination.
