PURPOSE: Fermented grains with living fermentative bacteria, and a producing method thereof are provided to maintain the living condition of the fermentative bacteria in the grains after cooking or storing for a long time. CONSTITUTION: A producing method of fermented grains with living fermentative bacteria comprises the following steps: culturing Lactobacillus plantarum, Lactobacillus reuteri, and Saccharomyces cerevisiae to obtain culture solutions, and mixing the culture solution to obtain a composite fermentative bacterium culture solution; mixing Salicornia herbacea powder, green tea powder, and water, and settling the mixture for 70-74 hours before filtering to obtain a natural extract; and mixing grains with 13-19% of moisture, 1-3% of composite fermentative bacterium culture solution, and 1-3% of natural extract, and fermenting the mixture at 25-39 deg. C for 3-7 days.본 발명은 (a) 유산균 및 효모를 배양한 배양액을 혼합하여 복합발효균 배양액을 제조하는 단계; 및 (b) 곡식에 상기 (a)단계의 복합발효균 배양액과 천연추출물을 첨가하여 25~39℃에서 3~7일 동안 발효시키는 단계를 포함하는 취사 후에도 복합발효균이 살아있는 발효곡식의 제조방법 및 상기 방법으로 제조된 발효곡식에 관한 것이다.
