PROBLEM TO BE SOLVED: To process a browned plant steadily and safely and in addition efficiently into natural green color.SOLUTION: Provided is a method for restoring green color of a plant, or holding the plant in the green color, with a chlorophyll-greening metal that makes chlorophyll of a plant green color, in which a metal binding protein is hydrolyzed to make an organic metal salt solution in which an amino acid metal salt is dissolved, and a plant is brought into contact with this organometal salt solution to restore the green color of the plant or hold the plant in the green color.EFFECT: While a browned plant can be restored to the green color with vivid color tone, the plant can be stored in a state in which the plant is processed into the green color, for a long period of time, and in addition can be made safely into the green color.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】褐変した植物を安定して安全に、しかも効率よく自然な緑色に処理する。【解決手段】植物の葉緑素を緑色にする葉緑素緑化金属で植物の緑色を復元しあるいは緑色に保持する方法であって、金属結合タンパク質を加水分解してアミノ酸の金属塩を溶解してなる有機金属塩溶液とし、この有機金属塩溶液に植物を接触させて、植物の緑色を復元しあるいは緑色に保持する。【効果】褐変した植物を鮮明な色調の緑色に復元しながら、植物を緑色に処理した状態で長期保存でき、しかも安全に緑色にできる。【選択図】なし
