The present invention relates to a method for making soy sauce using sap, and the purpose of the present invention is to provide functional soy sauce which is added with nutrients and functionalities of Acer mono sap and Cornus controversa sap, and thus is good for the health and has quality and preference. The method of the present invention comprises the steps of: (a) boiling and mashing soaked soybeans, and molding the soybeans into meju (Korean-style soybean koji), followed by drying and fermentation, to make meju; (b) aging a mixture of Acer mono sap, Cornus controversa sap, and salt water; (c) putting the meju made in step (a) and the mixture aged in step (b) in a pot, followed by fermentation; and (d) separating a fermented soybean paste from the fermented mixture, and mixing the remaining soy sauce with the mixture aged in step (b), followed by aging.
