Oilseed meals enriched with sugars and protected from rumen attack, process for the preparation thereof, and applications. The meals comprise a protein meal originating from oilseeds, with or without fat removal, and a reducing sugar in a proportion of up to a maximum of 5% by weight, relative to the total meal. The process involves (a) mixing the protein meal with the reducing sugar in the proportion indicated; (b) heating the product from the previous stage at 80-100 degree C; (c) passing the product thus obtained through an extruding press in order to obtain a final meal with a resistance to rumen microbial attack of 65-75%. These meals can be used as a feed for ruminants, either alone or combined with feedstuffs. <IMAGE>
