PROBLEM TO BE SOLVED: To provide a method for producing plant extract having enhanced refreshing sweetness and body taste, and also having fresh flavor with less impure taste and free from unpleasantness.
SOLUTION: The method for producing plant extract comprises: mixing plant raw material with water heating the mixture followed by cooling the heated mixture and adding enzyme to the cooled mixture to extract the mixture while allowing the enzyme to act on the mixture.
