PROBLEM TO BE SOLVED: To solve such a problem that cabbage shredded by a conventional method suffers from scraggly and large cut planes, is hard and rough to eat, and has poor eating feeling.SOLUTION: A method of shredding a cabbage includes steps of: bringing one of cut planes of the cabbage which is divided into two parts in a longitudinal direction passing through its core into contact with an upper surface of a rotating table, aligning the vicinity of a sharp end of the cabbage core with a rotating axis installed on one side of the rotating table, thereafter fixing the base of the cabbage core by a support installed on the other side of the rotating table, and cutting while turning around the rotating axis toward a blade. Since the cabbage is cut approximately at the right angle to each leaf, a cut plane of the minimum size is obtained. Thus the cabbage is less hard and smooth to eat, and is shredded into the same, thin and neat shapes. Furthermore, the number of pieces which can be obtained from one cabbage increases to approximately 1.6 times compared with the conventional method.COPYRIGHT: (C)2014,JPO&INPIT【課題】 従来の方法で切削した千切りキャベツにあっては不揃いで大きな切断面が目立ち、食べると硬く、ざらつき感があり食感に劣る。【解決手段】 キャベツの芯を通る縦方向に2分割した当該キャベツの1つの切断面と、回転台の上面とを当接し、当該キャベツの芯の尖端付近を前記回転台の一方に設備した回転軸に合わせた後、前記キャベツの芯の基部を前記回転台の他方に設備した支持具で固定し、回転軸を中心に刃の方向へ旋回させながら切削するキャベツの千切り方法で、それぞれの葉とほぼ直角に切るから断面は最少となり、食べたとき硬さやざらつき感が少なく、形状は同一で細長く美しく、更に、一つのキャベツから得られる切片の数が従来の方法に比較して約1.6倍多い。【選択図】図1
