In an egg, the sex of the embryo is affected or controlled through the application of light with a wavelength selected to promote embryonic development of the selected sex. There is provided an incubation apparatus having a lumen which can be sealed from the outside, and having a plurality of illumination elements in the lumen. Eggs are placed in the lumen, and certain environmental conditions are applied to the lumen to promote egg hatching. At the same time as the application of the environmental conditions, eggs are irradiated according to a predetermined illumination condition.
