PROBLEM TO BE SOLVED: To provide a method for fermenting fowl waste to control malodor generation in a fowl waste fermentation process by utilizing incineration ash or carbonized material as a water content control material, which indicates the possibility of attempting to reuse an effective component, by effectively collecting an easily diffusible nitrogen component contained in the fowl waste, and further to provide a fowl waste fermented material generating no malodor. SOLUTION: In the method for fowl waste fermentation, the fowl waste generating a little malodor just after excretion is mixed with at least either the incineration ash or the carbonized material so as to control the water content to be 55 to 80 wt.% to produce a compounded material, and thereafter the compounded material is fermented under an aerobic condition so as to make the water content therein 40 wt.% or below.
